Wing Lei Bar Returns with UNITY II, Built from a Year of Collaborations Across Five Cities

Six new cocktails trace encounters and exchanges across Tijuana, Bangkok, Hiriketiya, London and Vancouver

Macao, September 7, 2026 – Wing Lei Bar at Wynn Palace introduces UNITY II this September, adding six new cocktails and two new sections to its signature menu. The latest edition builds on the concept established by UNITY: cocktails inspired by the people, places and relationships that have shaped the bar.

Since the launch of UNITY, Director of Bars Mark Lloyd and his team have continued to build those relationships through Wing Lei Bar & Friends, an international guest-bartending program that has welcomed more than 100 guest bartenders to Macao, alongside collaborations with bars and bartenders around the world. The six new cocktails reflect experiences from the past year, translating collaborations, conversations and encounters on the road into drinks served at Wing Lei Bar.

Six New Drinks, a New Shape for UNITY

UNITY II introduces the most significant evolution of the menu since UNITY launched, retiring two sections and replacing them with two new categories: Shaken and Fizzes, creating a refreshed framework for the latest additions.

Day Drinking was first inspired by the Aruba Day Drink guest shift at Wing Lei Bar in 2025 and developed further following a reciprocal shift in Tijuana this April. The tequila and melon sour combines Midori, orgeat, and lemon juice, finished with a playful watermelon jelly garnish lining the glass. It joins Spressy Colada and Surf & Spice in the new Shaken section.

Spressy Colada came from a moment during Wing Lei Bar's guest shift at Bar Sathorn in Bangkok. Bar Sathorn's Beverage and Bar Manager Marco Dongi offered Lloyd an espresso while he was drinking a Piña Highball, prompting the idea for a new Spressy creation. Combining the flavor profiles of an Espresso Martini and Piña Colada, the resulting cocktail features rum infused with pineapple and coconut, Mr Black and espresso.

Inspired by a guest shift at Smoke & Bitters in Hiriketiya, Sri Lanka, Surf & Spice honors Lloyd's friendship with co-founders Don and Lalla and memories of time spent along the southern coast, where his daughter caught her very first wave right outside the bar. The cocktail brings together Amaretto infused with cinnamon, black pepper, cardamom and pandan, alongside tropical almonds found in Sri Lanka.

The second new section, Fizzes, introduces two further additions to the menu.

Mythical Highball takes inspiration from time spent at Archive & Myth in London and their Bar Director, Jack Sotti. The cocktail combines gin, apple, pear soda and pear brandy to capture the easy elegance of a leisurely afternoon in the city.

Silk Road is inspired by Laowai, the Vancouver Chinatown speakeasy known for its focus on baijiu and traditional Chinese spirits. Wing Lei Bar's interpretation begins with a strawberry-yoghurt wash that retains baijiu's distinctive fragrance while softening its intensity. The spirit is then paired with Canadian maple syrup and fig leaf soda.

The final addition revisits an existing Wing Lei Bar signature. Bananana! is an unabashed celebration of banana, using the fruit throughout: processed into juice, used as dilution water, incorporated into syrup, and macerated into bitters. The theme extends to the presentation, with the cocktail served in a banana flask and accompanied by an edible banana-flavored figure.

Lloyd's background in chemistry continues to inform the preparation behind the menu, but technique remains firmly in service of flavor. His understanding of how ingredients behave allows him to extract, preserve and reshape flavors in ways that would be difficult to achieve through conventional bartending methods. The Fizzes, for instance, require precise control of carbonation and solution to achieve their intended texture and intensity, while Silk Road's yoghurt-washing technique softens the sharper edges of Baijiu while preserving its distinct fragrance.

Inspired by the World, Created for Macao

As Wynn welcomed Asia's 50 Best Bars to Macao for the second consecutive year, the city once again became a gathering point for the global bartending community. At the same time, Wing Lei Bar has continued to strengthen its international reach through Wing Lei Bar & Friends and Lloyd's guest shifts abroad.

UNITY II is a reflection of those connections, transforming encounters, collaborations and shared experiences from around the world into six new additions to the bar's permanent menu.

The result is a menu shaped as much by what Wing Lei Bar has encountered beyond Macao as by what happens behind its own bar.
